Easy Seafood Chowder

A rich and comforting Seafood Marinara Chowder loaded with tender Shore Mariner Seafood Marinara, potatoes, corn and vegetables in a creamy broth, finished with fresh parsley and chives for an easy, satisfying meal.

Ingredients

    • 400-500g Shore Mariner Seafood Marinara, defrosted and drained 
    • 1 Tbsp olive oil 
    • 1 small onion, diced finely 
    • 1 medium carrot, diced finely  
    • 1 celery stick, diced finely 
    • 2 cups corn kernels 
    • 3 (750g) potatoes, peeled and roughly chopped 
    • 4 cups (1 litre) of chicken stock 
    • 200ml cream 
    • 4 Tbsp cornflour 
    • 2 Tbsp fresh chives, chopped 
    • 2 Tbsp fresh parsley, chopped 
    • Salt & pepper, to taste 
    • Crusty bread or croutons, to serve 

Method

  1. In a large saucepan heat the oil, and gently sauté the onion, carrot, and celery. 
  2. Add potato, corn kernels and chicken stock, bring to the boil and simmer for about 10 minutes or until vegetables are tender. 
  3. Then, add Shore Mariner Seafood Marinara and cream, bring back to a simmer. 
  4. Mix cornflour with a little wine or water and stir through chowder to thicken a little, remove from the heat. 
  5. Stir through chopped parsley. Season with salt and pepper. 
  6. Serve in a bowl and garnish the top with chopped chives, accompanied with crusty bread.
