- Cook the orzo in salted boiling water until tender, then drain and rinse under cold water.
- To make the dressing, in a bowl, whisk together sour cream, lemon juice, capers, dill, olive oil, Dijon mustard, garlic, salt, and black pepper.
- Combine the orzo with smoked salmon, cucumber, red onion and tomatoes.
- Pour over the dressing and toss until well coated.
- Serve in shallow bowls.
