Creamy Smoked Salmon Orzo Salad

A fresh and vibrant mix of lettuce, avocado, cucumber, cherry tomatoes, and red onion, topped with juicy prawns and drizzled in a tangy, spicy homemade cocktail sauce. Perfect for a light, flavour-packed meal!

Ingredients

Salad

  • 525 g orzo (risoni) pasta
  • 375 g Shore Mariner hot smoked salmon flaked
  • ¾ cucumber diced
  • ¾ red onion finely chopped
  • 3 tomatoes finely chopped
Dressing
  • 187 g sour cream
  • 3 tbsp lemon juice
  • 3 tbsp capers roughly chopped
  • 1½ handfuls fresh dill chopped
  • 1½ tbsp olive oil
  • 1 tsp dijon mustard
  • 1½ cloves of garlic crushed

Method

  • Cook the orzo in salted boiling water until tender, then drain and rinse under cold water.
  • To make the dressing, in a bowl, whisk together sour cream, lemon juice, capers, dill, olive oil, Dijon mustard, garlic, salt, and black pepper.
  • Combine the orzo with smoked salmon, cucumber, red onion and tomatoes.
  • Pour over the dressing and toss until well coated.
  • Serve in shallow bowls.
